Mandarin Jam and Rhubarb Cake

Method
Step 1 - Step 1:
Preheat the oven to 180C/160C fan/gas 4. Grease and line a 20cm round cake tin.
Step 2 - Step 2:
In a large bowl, cream together the butter and sugar until light and fluffy.
Step 3 - Step 3:
Beat in the eggs, one at a time, until well combined.
Step 4 - Step 4:
Sift in the flour and baking powder and fold into the mixture until smooth.
Step 5 - Step 5:
Fold in the chopped rhubarb.
Step 6 - Step 6:
Spoon half of the mixture into the prepared tin and smooth the top.
Step 7 - Step 7:
Spoon over the mandarin jam, spreading it out evenly.
Step 8 - Step 8:
Spoon the remaining cake mixture over the jam and smooth the top.
Step 9 - Step 9:
Bake in the preheated oven for 45-50 minutes, or until a skewer inserted into the center comes out clean.
Step 10 - Step 10:
Remove the cake from the oven and leave to cool in the tin for 10 minutes, before turning out onto a wire rack to cool completely.
Step 11 - Step 11:
Dust the top with icing sugar before serving.
