Peaches Baked with Orange Blossom Honey

Method
Step 1 - Preheat the oven
Heat the oven to 150 C / 300 F / gas mark 2
Step 2 - On the stove
Add dessert wine, water, honey and the vanilla pod (cut in half lengthways) to a saucepan and bring to a simmer, allowing the honey to melt into the mixture before turning off the heat
Step 3 - Bake the peaches
Cut the peaches in half, remove the stone and space evenly on a baking tray. Pour the mixture over the peaches and cover the baking tray with tin foil before placing it in the centre of the oven. Allow approximately 30 – 40 mins cooking time, depending on the size of your peaches
Step 4 - Serving
Delicious hot or cold, drizzle a spoon of the liquid from the baking tray and serve with semifreddo or ice cream
