Baked Arborio Rice Pudding

Beyond risotto, the grain size and flavour of Seggiano Arborio Rice is also ideal for making a sweet, milky rice pudding.
Preparation takes no time, and this warming dessert can be left to tick away in the oven while you concentrate on the main course.

Method
Step 1 - Preheat your oven
Set the temperature to 150C/300F/Gas Mark 2
Step 2 - Grease the baking dish
Use the butter to thoroughly grease your ovenproof dish, which should have at least a 1lt capacity
Step 3 - Mix it up
Mix the rice and sugar together and add to the baking dish
Step 4 - Add the milk and stir
Pour the milk over the rice and sugar mixture and stir well
Step 5 - Add the nutmeg and start baking
Sprinkle the grated nutmeg over the top and place into oven. Bake for approximately 1 hour, until the rice is soft and swollen and a golden skin has formed on top
Step 6 - Allow to cool and serve
Add a topping of your choice, like fruit compote or a scoop of ice cream
