Summer Berry and Liquorice Sorbet

For those with a sweet tooth and predilection for liquorice, this is bound to be a winner. Finish this dessert with fresh summer berries to compliment the bittersweet flavours of liquorice. You'll need an ice-cream maker for this recipe.

Method
Step 1 - Soften the fruit
Place the berries, condensed milk and lemon juice into a medium sized pan and allow to simmer gently until the fruit has softened.
Step 2 - Sieve the fruit
Sieve the fruit puree to remove the seeds, discarding the seeds and remaining pulp.
Step 3 - Make the sorbet
Pour the juice into an ice cream maker and churn for 20-25 minutes or until thickened.
Step 4 - Melt the liquorice
Whilst the sorbet is churning, place the liquorice pieces and water into a small pan and gently heat. The liquorice pieces will begin to melt and turn into a syrup. Once most of the liquorice has melted, this syrup can either be placed through a sieve to remove any remaining lumps or placed into a blender to fully combine. Add more water if necessary and allow to cool.
Step 5 - Layer the sorbet
In a lidded, freezer proof container, layer the sorbet and liquorice syrup alternately, swirling between each layer to create a ripple effect.
Step 6 - Freeze
Place in the freezer for 6 hours or overnight.
